How to Make Banana-Oatmeal Pancakes (No Gluten)

Ingredients
What you will need:
- 2 eggs
- ¾ cup of gluten-free oatmeal
- 1 banana
- 1 tbsp vanilla extract
- 1 tbsp of honey
- 1 tbsp of coconut oil
Optional:
- 1 tbsp of cocoa
- 1 tbsp of brown sugar
Instructions
Step 1. Crush the banana with a fork.
Step 2. Add the vanilla extract, the oatmeal, and the 2 eggs. Mix well until you get a dough with a thick consistency. If you prefer, instead of mixing manually, you can use a blender to save time. You will also get a more uniform mixture without any lumps.
Step 3. Heat a tablespoon of coconut oil in a non-stick frying pan. Add the pancake mix and wait until you can spot a few bubbles appearing on the side facing up. Then flip the pancake over and wait until it’s cooked.
Step 4. Decorate your pancakes with your favorite add ons. You can use any type of nut, chopped fruit, powdered sugar, or honey.
Variations
If you are a chocolate lover and you have a sweet tooth, you can add a spoonful of brown sugar and a spoonful of cocoa powder to the mixture. In addition to gaining in color and aroma, your mixture will have an intense chocolate flavor.
