For 5 servings, you will need:

3 cups chopped potatoes

½ cup shredded cheddar or Swiss cheese

1 tbsp of butter

1 cup minced onion

2 ½ tbsp flour

1 ½ cups whole or skimmed milk

¾ cup chicken or vegetable broth

½ cup of water

⅛ tsp ground red pepper

2 tbsp chopped chives

Chopped parsley to garnish (optional)

Melt the butter in a medium-size pot and sauté the onion until tender or transparent.

Add the flour and stir actively for 30 seconds to prevent the ingredients from sticking to the pot.

Add the potatoes, milk, broth, and water. Stir and cook over medium heat until it boils.

Once the soup is boiling, cover the pot, and let it simmer for 10 minutes, stirring occasionally.

This step may take more or less time, depending on the thickness of the potato pieces. We recommend that you check the pot from time to time by sticking a knife or fork in the potatoes.

The soup should take on a creamy consistency.
