How to Make Cheesy Potato Soup

A creamy and cheesy potato soup is a delicious comfort food that is perfect on cold days, but it’s also a faithful ally when there’s little time to cook. And you can enjoy it as a main dish or as a side dish that can upgrade your favorite food.

Ingredients

For 5 servings, you will need:

  • 3 cups chopped potatoes

  • ½ cup shredded cheddar or Swiss cheese

  • 1 tbsp of butter

  • 1 cup minced onion

  • 2 ½ tbsp flour

  • 1 ½ cups whole or skimmed milk

  • ¾ cup chicken or vegetable broth

  • ½ cup of water

  • ⅛ tsp ground red pepper

  • 2 tbsp chopped chives

  • Chopped parsley to garnish (optional)

Step 1

  • Melt the butter in a medium-size pot and sauté the onion until tender or transparent.

Step 2

  • Add the flour and stir actively for 30 seconds to prevent the ingredients from sticking to the pot.

Step 3

  • Add the potatoes, milk, broth, and water. Stir and cook over medium heat until it boils.

Step 4

  • Once the soup is boiling, cover the pot, and let it simmer for 10 minutes, stirring occasionally.

  • This step may take more or less time, depending on the thickness of the potato pieces. We recommend that you check the pot from time to time by sticking a knife or fork in the potatoes.

Step 5

  • Add the cheese of your choice, the ground red pepper, and cook until the cheese melts.
    The soup should take on a creamy consistency.

Step 6

  • Serve it while it’s hot, and sprinkle the chopped chives and parsley on top. You can shred more cheese on top for a sharper flavor.
