How to Make Chicken-Vegetable Soup
Chicken soup is a classic among homemade soups. Apart from being a tasty and rich meal, it’s considered a remedy for the common cold. It may be served with meat or can be accompanied by vegetables and rice.

Ingredients

3.3 lbs (1½ kg) of chicken (use the cuts of your choice, and you may include chicken wings with their skin to add more flavor)

½ onion

½ head of garlic

1 tsp of chicken broth powder

2 serrano peppers (optional)

3 carrots

2 chayotes
-
3 zucchinis

Branches of cilantro

Salt to taste

Procedure
1. Put the cuts in a pot with plenty of water to fully cover them. Add onion, garlic, chicken broth powder, and a teaspoon of salt.
2. Boil for 35 minutes over high. Remove the foam that appears on the surface with a spoon for the broth to be as concentrated as possible.
3. Wash the carrots (which were previously peeled), the chayotes, and the zucchinis. Cut the vegetables into strips or small pieces. Set them aside.
4. Once the broth is done, add carrots, chayote, and cilantro. Cook for 15 minutes and remove the onion, garlic, and cilantro branches.
5. Add the zucchinis and the serrano peppers, cut in half. Cook for 10 minutes and taste the soup to check if it needs more salt.
6. You may serve it with either cut-up or whole chicken cuts. You can accompany it with Mexican rice, lemon, tortillas, and avocado.
