Ingredients
For the dough
-
1 tbsp of instant yeast
-
7 cups of flour
-
6 tbsp of sugar
-
¼ of a stick of butter
-
1 cup of whole milk
-
2 eggs
-
1 tsp of salt
For the filling and icing
-
3 tbsp of cinnamon
-
½ stick of butter
-
¼ cup of white granulated or dark brown sugar
-
¾ cup of powdered sugar
-
½ block of cream cheese (approximately 8 tbsp)
-
1 tbsp of melted butter
-
3 tbsp of milk
-
½ tbsp of vanilla essence
Procedure
To make the dough
-
Pour the flour and salt into a large bowl. Then mix the ingredients together.
-
Heat the milk, just slightly. When it’s warm, pour it into a small bowl and add yeast. Stir until it dissolves. Once you’ve accomplished this, add sugar and stir again.
-
Add the wet mixture to the dry one and mix it until all of the ingredients are well-integrated.
-
Crack the eggs into another bowl and slightly whisk them. Then transfer the eggs to the mixture and stir them in well (it’s easier if you work the dough by hand).
-
Add the butter, which should be cut into small cubes. It should be room temperature or you won’t be able to combine it well with the rest of the ingredients. Then rub butter or oil into a container and transfer the dough. Cover it with plastic wrap and allow it to rest for 1 to 2 hours or until the dough has doubled in size.
-
Once the dough has doubled in size, remove the plastic wrap. Sprinkle some flour on a surface and place the dough on it. Start kneading and use your knuckles and fingers to punch the air out of the dough.
-
After deflating the dough, roll it into a ball. Cover it with a dishtowel and let it rest for 10 to 15 more minutes.
To make the filling
-
For the filling, melt ¼ of a stick of butter in the microwave. Then add cinnamon and sugar. Stir it with a spoon. If you want the mixture to have a thicker consistency, add more cinnamon. However, if you want it to be more like a sauce, then use the amounts indicated in the ingredient section.
-
Use the rolling pin to flatten the dough on a well-floured surface to a 0.3-inch to 0.7-inch thickness, depending on how thick you want the rolls to be. Use a spoon to spread the filling over the dough. Leave one edge free to be able to roll it.
-
Roll the dough up and cut it into pieces. You can do this by using a piece of thread. Slide it under the dough, cross both ends over the top, and pull them in the opposite direction. This way, your rolls won’t get squashed. The rolls can be as thick as you want, but bear in mind that they shouldn’t be too thin. Sprinkle some flour over a baking pan and place the rolls on it, evenly spaced.
-
Allow the rolls to rest on the pan for another 30 minutes while they rise a bit. Preheat the oven to 347°F (175°C) for approximately 15 minutes. Afterward, put the pan in the oven. Bake the rolls for 25 to 30 minutes.
-
In the meantime, you can make the icing. Use a spoon to soften the cream cheese and add ½ tablespoon of milk, the rest of the butter, the sifted powdered sugar, and the vanilla essence. Mix it well until you get a thick consistency. Once the rolls have cooled off, pour the icing on top.
