How to Make Cloud Bread
Cloud bread became popular among TikTok users thanks to its unusual look and simple recipe. You only need 3 simple ingredients to make it, and in an hour, you’ll have a wonderful dessert that looks like a cloud.

Ingredients
🔶 3 egg whites
🔶 1.4 ounces of sugar
🔶 0.5 ounces of corn starch
The original recipe has only 3 main ingredients. There is no flour or yeast here, so it is more correct to call cloud bread a variation of a meringue. If you want to, you can change the recipe slightly as follows:
🔷 Add vanillin (5 g) to the original ingredients to make the bread aromatic and eliminate the egg white flavor. Or you can replace it with vanilla sugar.
🔷 Add food coloring to color the soft part of the bread, making it blue, pink, or multi-colored.
🔷 Use ultrafine sugar or powdered sugar to ensure the dough is fluffy and prevent the “weeping” of the bread during baking.
The cooking process
Step 1: Put the egg whites into a bowl. Leave it out for half an hour. Chilled whites don’t whisk well. If you let them reach room temperature, their volume will increase 6 to 8 times during whisking.
✅ Tip: The main secret of the whisked whites is an absolutely dry dish. Therefore, it is best to beat the eggs in a glass bowl that has been wiped from the inside with a dry paper towel.
Step 2: Whisk the whites for 2 to 3 minutes to get light fluffy foam.
Step 3: While whisking, add sugar in small parts to the whites: this way it’ll mix faster, becoming a single mass with the whites.
Step 4: Now add starch and vanillin to the mass. Whisk until smooth.
Gradually increase the whisking speed and after a few minutes, you will have a dense, thick mass. If the whites and sugar are whisked correctly, their volume will increase by several times, and you can safely raise the bowl with them over your head and turn it over: the whites will remain in the bowl.
Step 5: At this step, you can add food coloring. It’s best to use dry coloring because it won’t affect the bread texture and the bread won’t collapse after baking. Gel food coloring or thick, colored syrups will also work.
Step 6: Preheat the oven to 300°F, and turn on the convection mode. Line the tray with baking paper. Put the whisked whites on it. You can make one large bread or several small buns. The whites will bake, retaining their volume and shape, so you can use a spatula or a knife to slightly even the edges so that the shape of buns or bread becomes semi-circular.
Bake for 30 minutes. Don’t open the oven during the entire baking time, otherwise, the mass will collapse. Then turn off the oven and leave the bread in it for another 10 to 15 minutes.
The bread has a very soft and delicate crumb, and sweetish taste. Its shape may drop slightly after you break or cut it, but the taste and pleasant texture will remain.
Cloud bread is a perfect addition to tea or coffee. You can brush it with cream cheese and decorate it with berries and nuts, serve it with butter and honey, or combine it with ice cream, buttercream, or jam. Bon Appetit!
