How to Make Lentil Soup
People grew lentils all the way back in the Stone Age. This legume is a great source of protein; there are numerous delicious foods you can prepare with it. Lentil soup is a tasty alternative for an everyday meal that is also good for your health.

Cooking utensils
To make lentil soup, you will need:

Cutting board

Knife

4 or 5-liter pot

Frying pan for vegetables
Ingredients

500 g of lentils (you can use red, green, or any other kind)

500 g of beef ribs
-
3 potatoes
-
1 bell pepper
-
1 carrot
-
2 onions
-
2 big tomatoes or 4 cherry tomatoes

20 grams of tomato paste
-
5 bay leaves
-
Oil for frying

Salt and pepper
Preparation
For the broth:

Wash the ribs and cut them into pieces to fit them into the pot.

Peel 1 onion and put it in the pot whole.

Add salt, pepper, and bay leaf.

Bring to a boil and cook on low heat for 1.5 hours.

Take out the ribs, put them on a plate, and let them cool.

Strain the broth; this will be the base for the soup.
For the vegetables:

Wash the vegetables.
-
Peel the onions, carrots, and potatoes.

Cut the onion and the carrot into small cubes. Grating the carrot is also an option.

Cut the potatoes into medium cubes, or the way you usually cut them for soup.

Chop the tomatoes and bell pepper.

Don’t mix the vegetables yet.

Pour some oil on the frying pan.

Place on medium heat.

Add the chopped onions and carrots to the pan.

Fry them for 5-7 minutes.

Add the tomatoes and bell pepper.
-
Fry all the vegetables for 7 more minutes.

Add the tomato paste.
-
Mix well.

Keep frying the vegetables for another 3 minutes.

Remove the vegetables.
The final stage:
- Add the previously washed lentils to the broth.
- Cook everything over medium heat for 15 minutes.
- Add potatoes to the broth and boil for 20 more minutes.
- Remove the meat from the ribs, chop it, add it to the soup along with the vegetables 5 minutes before you finish cooking.
- Add salt and pepper.

Serve the soup while it’s still hot.
