How to Make Marshmallow Fluff
Marshmallow fluff is not like what they add to cocoa or roast at a bonfire. It’s more like a light and airy cream and it tastes like meringue.

Classic marshmallow fluff
Ingredients:
- 1 egg white
- 70 g of sugar
- 30 ml of water
- 50 g of invert syrup
- 15 g of powdered sugar
- vanillin and citric acid
Inventory:

- deep bowl
- glass jar (for storing the fluff)
How to make:
1. In the pot, mix the water, sugar, and invert syrup. Bring it to a boil.
2. When the mix starts to boil, decrease the temperature but keep heating it.
3. Using a mixer, whip the egg white, vanillin, and citric acid.
4. Take the sugar mix off the stove. While still mixing the whites, slowly pour the sugar mix into the whites.
5. Keep stirring for about 3-4 minutes.
6. Add the powdered sugar and stir again.
7. Once the cream dries, it’s done.
In a hermetic container, marshmallow fluff can be stored at room temperature for up to 6 weeks.
Marshmallow fluff with cherries
Ingredients:
- 150 g of cherries
- 70 g of powdered sugar
- 70 g of water
- 200 g of sugar
- 1 egg white
- 10 g of agar-agar
Inventory:

- strainer
- deep bowl
- spoon
- pot
- jars for storing the fluff
How to make:
1. Wash the cherries, put them into the bowl, and on the stove. If you are using frozen cherries, defrost them first.
2. Put the lid on top and heat the cherries for about 10 minutes, stirring them from time to time.
3. Put the cherries through the strainer to get rid of the pieces.
4. Add powdered sugar, mix it, and leave it to cool down.
5. Once the mash cools down, add the egg white and mix it until the volume increases by 2-2.5 times.
6. Prepare the syrup on the stove. Mix water, sugar, and agar-agar. Boil the syrup, stirring it until you get a homogeneous liquid.
7. While still mixing the egg whites, slowly add the hot syrup.
8. Keep mixing it for 3-5 minutes.
9. Once the fluff is done, put it into different jars.
Optional. You can use any other berries instead of cherries or try to make citrus marshmallow fluff by adding lemons or oranges.
