- 1 1/3 cup all-purpose flour
- 1/2 tsp salt
- 1/3 cup vegetable oil
- 2 tbsp cold water
1/2 cup sugar
1 tsp ground cinnamon
1/2 tsp salt
1/2 tsp ground ginger
1/8 tsp ground cloves
1 can (15 oz) pumpkin (not pumpkin pie mix)
1 can (12 oz) evaporated milk
Sweetened Whipped Cream:
- 3/4 cup heavy cream
- 2 tbsp sugar
Preheat oven to 425ºF.
In a medium bowl mix the flour, salt, and vegetable oil with a fork until the flour is moistened.
Sprinkle the mixture with cold water, 1 tablespoon at a time, until all the water is absorbed. Toss it with a fork.
Shape the pastry into a ball.
Press the pastry until it covers the bottom of a 9-inch glass pie plate. Make sure there is some on the sides as well so it’s all covered except for the top.
In a large bowl, start beating the eggs slightly with a whisk or a hand beater.
Add sugar, cinnamon, salt, ginger, and cloves to the bowl.
Add the pumpkin and evaporated milk.
Beat everything together.
Pour the pumpkin filling into the pie plate that has the pastry in it. To prevent spilling, make sure to place the plate on an oven rack before pouring the contents in.
Put it in the oven and bake for 15 minutes.
After the first 15 minutes. Reduce the oven temperate to 350ºF. Bake for another 45 minutes or until you can insert a knife in the center and it comes out clean.
Once it’s cooked, place it on a cooling rack. Let it cool completely for about 2 hours.
In a medium bowl add the heavy cream and sugar.
Beat these 2 ingredients together until stiff peaks form.
After waiting 2 hours for the pie to cool down, you can add the whipped cream on top and it’s ready to eat.
