How to Prepare Zucchini in 3 Ways

The zucchini is a very versatile ingredient you can always have handy around the kitchen. You can fry them, sauté them, stuff them, roast them, and use them to make a variety of dishes. They are far from expensive and very easy to prepare.
5-Minute Crafts wants to show you 3 different ways to make them.

1. Zucchini, Mexican style

What you’ll need:

  • 2 cups of diced zucchini
  • 1 cup of diced tomato
  • ½ onion, diced
  • 1 cup of sweet corn
  • 3 tablespoons of oil
  • 1 garlic clove, finely chopped
  • Salt to taste
  • Sour cream (to taste)
  • Fresh cheese (to taste)

Instructions

1. Heat a skillet over medium heat.

2. Stir-fry the onion until it becomes translucent, then add the garlic and the diced zucchini. Stir-fry everything for about 10 more minutes.

3. Add the tomato and corn.

4. Season with salt to taste and cook for another 15 minutes.

5. Serve with sour cream and cheese to taste.

2. Roasted zucchini with avocado and cheese

What you’ll need:

  • 8 zucchinis, sliced
  • 100 g of fresh cheese, grated
  • 1 avocado, sliced
  • 2 tablespoons of olive oil
  • 2 tablespoons of sour cream
  • 1 tablespoon of chopped cilantro
  • 1 pinch of dried oregano
  • Salt (to taste)
  • Pepper (to taste)

Instructions

1. In a small bowl, mix the olive oil and oregano, then season everything with salt and pepper to taste.

2. Glaze the zucchini slices with the vinaigrette you prepared earlier.

3. Place a skillet over medium heat and cook the zucchini on both sides until golden brown.

4. Remove and serve with sour cream, avocado, cilantro, and queso fresco.

3. Zucchini parmesan

What you’ll need:

  • 2 zucchinis, cut into slices
  • 1 cup of bread crumbs
  • ½ cup of olive oil
  • ½ cup of grated parmesan cheese
  • ½ cup of wheat flour
  • 2 beaten eggs

Instructions

1. In a bowl, mix the bread crumbs with the parmesan cheese.

2. In other separate containers, place the wheat flour and the beaten eggs.

3. Now it’s time to bread each zucchini slice. You have to start by dredging it in the flour, then in the egg.

4. Only after that can you dip it in the breadcrumbs and the parmesan and egg mixture.

5. Once you’re done with all the zucchini slices, place a skillet over medium heat, wait for it to heat up, and fry the slices until golden brown on both sides.

6. Remove them, place them on absorbent paper, and serve.
